Easy Individual Egg Cup

My family has a tradition: going out to breakfast.  My parents go to the same restaurant every Saturday morning: Stax.  Whenever we visit, we usually make at least one trip there.  Even my two year old talks about Stax.  Whe I say, "Do you want to go out to breakfast?"  she'll reply, "Mommy, are we going to go to Stax?" 

My husband and I tried to find out own Stax here in Rock Hill.  We went to all the breakfast places in our town.  We tried the chains like IHOP and Denny's and Shoney's.  But we were looking for somewhere with that "Mom and Pop Charm."  We found a place called "The Litttle Cafe."  It has become our favorite little breakfast establishment.  For a while there, we went every week.  (Actually, if I am being honest, I would go to Weight Watchers, weigh in, and then go have an omelet and hash browns!) 

I am not sure where the magic comes from in going out to breakfast.  It's my favorite meal of the day to eat out.  Maybe it's the neverending coffee cup and the little creamer cups.  Maybe it's the way you can request your eggs any way you want-- over light, over hard, poached, sunny-side-up, soft-scrambled...

Anyway, both my waistline and our wallets have forced us to stop hitting up The Little Cafe every single week.  So instead, I have looked for other ways to get my breakfast fix without having a POINTS disaster. 

This morning I made my own variation of a Hungry Girl recipe called "Egg Mug Lorraine."  I am calling mine "Easy Individual Egg Cups."  No matter what you call it, this recipe turned out delicious.  When you bite into the eggs, you taste the creaminess of the cheese, the salty, crunchiness of the bacon, and the dijon mustard gives it a a spicy twist.  Add a cup of coffee, and you'll feel like you're having a fancy restaurant breakfast in your own kitchen. 

Now, I know "real" chefs hate the microwave, but I am not a "real chef."  I am, however, a "real mom" and sometimes the microwave can be used for good.  It's not always evil!

Ingredients:
1 whole egg + 1 egg white
1 wedge Laughing Cow Original Light
1 tsp dried onion flakes
1 tbsp (about 1 slice) cooked turkey bacon broken/crumbled into small pieces
1/2 tsp dijon mustard
ground black pepper
green onion for garnish, if desired

Directions:
Spray a small cup with nonstick spray.  Add all ingredients except for the green onion.  (Break the cheese into pieces as you add it to the mix.) Stir well. Microwave on high for 1 minute.  Stir and microwave for 50-60 seconds, until eggs are set.  Garnish with the green onion.
