Ole! Chicken Enchiladas!

Happy Sunday!

Today is a little bit of a sad day for me, because I have to return to work tomorrow.  This has been a wonderful holiday break, but it’s going to be hard to get up at 5:30 a.m. tomorrow.  Don’t get me wrong—I love my job—but it’s also nice to be at home with my family, have time to cook, have time to work on Zumba choreography, and sleep in. On the other hand, I am spending too much money staying home!  So tomorrow… I’ll be back at school. 

So today was day 2 of the Eat In Month Challenge.

Breakfast was a ham and egg sandwich and apple slices.  (And coffee of course!)

Today’s lunch was a grilled banana and almond butter sandwich with leftover collard greens.  (I know, what a weird food combination!)  But this sandwich was so good.  Sweet and flavorful—crunchy on the outside and gooey on the inside!

I am also really trying hard to drink more water.  I am shooting for 80 oz. a day.  I really like infused waters.  Especially lemon-infused water.  I wish I had some mint to add in.  Lemon and mint are the best combination!

For dinner tonight, I tried a new recipe from The One Dish Bible: Chicken Enchiladas.  It was a hit with the entire family!

Ok, now we’re settled in, watching “The Book of Eli.”  Anyone seen this movie?  It’s weird… and creepy.  I wouldn’t have picked it, but I forced the hubs to watch “Eat, Pray, Love” last night and that one was definitely more of a chick flick, ya know?
