Ole! Chicken Enchiladas!

Happy Sunday!

Today is a little bit of a sad day for me, because I have to return to work tomorrow.  This has been a wonderful holiday break, but it’s going to be hard to get up at 5:30 a.m. tomorrow.  Don’t get me wrong—I love my job—but it’s also nice to be at home with my family, have time to cook, have time to work on Zumba choreography, and sleep in. On the other hand, I am spending too much money staying home!  So tomorrow… I’ll be back at school. 

So today was day 2 of the Eat In Month Challenge.

Breakfast was a ham and egg sandwich and apple slices.  (And coffee of course!)

Today’s lunch was a grilled banana and almond butter sandwich with leftover collard greens.  (I know, what a weird food combination!)  But this sandwich was so good.  Sweet and flavorful—crunchy on the outside and gooey on the inside!

I am also really trying hard to drink more water.  I am shooting for 80 oz. a day.  I really like infused waters.  Especially lemon-infused water.  I wish I had some mint to add in.  Lemon and mint are the best combination!

For dinner tonight, I tried a new recipe from The One Dish Bible: Chicken Enchiladas.  It was a hit with the entire family!

Ok, now we’re settled in, watching “The Book of Eli.”  Anyone seen this movie?  It’s weird… and creepy.  I wouldn’t have picked it, but I forced the hubs to watch “Eat, Pray, Love” last night and that one was definitely more of a chick flick, ya know?

  2. Ok, I thought the lunch sandwich looked good until I saw your dinner...YUM!! David and I are also going to plan to do as many healthy dinners in this month as we can...we may not do the entire month challenge as in "The Chic Life", but we'll try it out. In the meantime, I might be copying some meals from you! Delicious! Hope getting back into the grind today goes well!

  3. I knowwww- going back to work was SO hard. Lots of yummy eats. The grilled banana and almond butter sandwich looks fantastic. Josh and I are huge enchiladas fans and I haven't made them in forever- thank you for the inspiration!!

  4. Oh I have just discovered the awesome-ness that is almond butter. That is one good looking sandwich =) And I love infused water too! The hubs and I had some at a wine tasting recently, and it was so good! It was cucumber and a little bit of lime. Yum! Oh, and the hubs also DVR'ed the Book of Eli, so I'm sure we will be watching that one soon! I heard it was really good. But an Eat Pray Love watching will be soon to follow since he made the mistake of getting that for me for Christmas since it's my fave movie =)
